PBC (Pit Barrel Cooker)



I purchased the Pit Bsrrel Cooker Prime Package. This is the everything bundle, it includes everything you need to cook with and maybe some you don't.  The PBC has 4 packages you can purchase.  The Basic, Select, Choice, Prime.  Each package includes everything in previous package plus some additions.




While I will be brutally honest and talk about all the flaws I noticed, I place a high value on function over "fashion".  It just flat out cooks great which is why I bought it. My 1st 3 cooks went well.  This is bay far the easiest outdoor cooker to use and it outcooks all the rest (at least the rest that I have used)

My first impression of the PBC, sorry no unboxing video.  It did seem to be packaged well.  The entire bundle was in the box with the PBC.  It was very easy to setup, all you needed to do was attach the horseshoe handle to the lid, place it on the stand and set the bottom vent.

The screw to tighten  the bottom vent seemed striped, but I used a screw from the bottle opener to attach the vent and was able to tighten it enough to stay in place.  I was still able to attach  the optional bottle opener I had 2 extra screws.

The enamel coating on the bottom of the cooker was missing in a few places.  I dont think it will matter much, I do keep it covered.  The PBC cover  is well made and heavy duty,  It was part of the package.

So this thing flat out cooks.  I love the charcoal taste and well dropping in some wood does add to the wood taste.  PBC has great videos. on startting the fire as well as video recipes.  They also have a blog.  Many third party pitmasters have vido's and recipes targeting the PBC.

 Pork Tenderloin, Pears and Pineapple (10/4/2020) I hung the tenderloin For this cook I added a chimney of Royal Oak all natural briquettes to the partially burned charcoal in the basket. I started the cook early because I thought I had 2 Thick Pork tenderloins  It turns out there was 4 of them.   I coated them with olive oil and rubbed them down with Central BBQ Rib Rub I skewered the Pears whole and hung them also I also had some skewered pineapple. The Fruit hung for about 30 minutes, the pork 45 minutes or so. Lunch is served.  That is Alabama White BBQ Sauce on the Pork Tenderloin. Some notes about the cook.  I cooked the Tenderloins to an Internal temperature of between 140 and 150.  I let them rest tented in foil for about a half an hour

Brisket/Pork Butt Fat up or Fat down

Brisket/Pork Butt Fa6 up or down  Many of have heard if you could marry a super model ot cook a Brisket would you do it Fat side up or Down.  The same applies to Pork Butts.  I was recently asked why I cook Fat down.  My reply of because I have always done it that way didn't seem to be right.  It turns out that based on the Pit Barrel cooker and my Previous pellet grills fat down wa the right way.  I had a 50/50 shot and did it right.  The logic in the below 2 articles is that the fat side should face the heat source. July 4th weekend cook - Bone in Chicken Thighs, Corn, Pineapple and Peaches and Apple

July 4th  weekend cook - Bone in Chicken Thighs, Corn, Pineapple and Peaches and Apple  7/5/2020 Bone in Chicken Thighs, corn, pineapple and cut up peaches and apple in tinfoil on rebar, This was a simple cook.  I did learn a few things.  Chicken on the Grate cooks faster then Chicken Skewers, however Chicken Skewers seemed to have better flavor.  I actually finished the skewered chicken on the grate and this may be the best of both worlds.  **************************************************************************** The baked peaches and Apples in tin foil across the rebar worked great.  I call this crustless peach and apple pie.   Just when you thought it couldn't taste any better, well just add whipped cream, the new bacon for deserts. ******************************************************************************** This made a very satisfying lunch of Chicken, Corn and Pineapple.  The Pineapple was on a skewer and the corn was in the Corn
