Chicken Thighs and Marinated Veggies (8/18/2020
This was an easy cook. I seasoned the chicken with the PBC rub. The vegetables were marinated with italian dressing. It took about 40 minutes. My wife loved the chicken. We had it for dinner and we turned the leftover chicken into chicken Lo Mein which was enough for 4 individual lunch serving.
After the chicken and vegetables came off the grill I cooked a crustless peach pie which was wrapped in tin foil.
Leftovers
My wife took the leftover PBC chicken thighs from last night's dinner and turned it into lo mein for today lunch.
Crustless Peach Pie
When the chicken was done cooking I cooked some crustless peach pie on the PBC. It is just a peach pie filling with no crust of course. We used fresh peaches that we got from a roadside produce stand, butter, Stevia and Cinnamon. It is so yummy with wipped cream on top or as a pie Al a Mode
Whipped Cream only.
Pie Al a Mode dont forget the whipped cream!
