This was a 9lb pork Butt with a Moderate Fat Cap.  I Rubbed it with PBC All Purpose Rub,
It went on the Pit at 545 am.

There was rain in the forcast 40% by 2pm.  It never did rain which was a good thing

A nice thin smoke poking out the rebar about 7:40 am, Its Ok to look while cooking, just don't remove the lid!

At about noon I added the Marinated Turkey Breast (We bought them that way) and some corn.  This caused The PBC to smoke like crazy and the coals to burst in flames,  The Pork Butt was at about 170 and remained at 170 for at least 30 minutes.  The bark was setting up real nice.

After about 30 minutes perhaps 40 the turkey and corn came off.  The Turkey was Juicy and the corn was as expected, really good

At 2:15 Pm the pork was at 200 plus when tempted in many places and it was butter tender to the probe.  It Broke apart when removed from the PBC.  It was not wrapped while cooking but was wrapped in foil for the rest period.

After 8 1/2 Hours it was so tender it fell apart when taken off the PBC

Dont forget to let it rest, 2 hours is great, Ive gone as long as 4 hours


After about 2 hrs and 15 minutes rested in a cooler double wrapped in foil it just pulled so easy.
The bone came out clean as a whistle.  The "Crispy Critter" was a piece of bark that broke off the butt butt as it was removed from PBC and it was added to the foil separate.  My wife and I love those "Crispy Critters"

1/2 the fun of BBQ is having others enjoy your Q,  The other Half is me enjoying my Q.  A few containers to give away to some friends and family.  This is my 2nd Butt in 4 days and I have 1 more in the freezer.
