Hickory Smoked Beef Ribs

 I got a few Hickory Smoked Pre Cooked Beef Short Ribs from US wellness meats.  We made 2 packs in the crockpot on low with some over the counter BBQ Sauce.  Some of the bones were meaty other really weren't.  They tasted Okay.  I did enjoy the beef ribs I made previously using the The Malcom Reed Rib Recipe - Click Here

Next time I may try them reheated low and slow on the PBC perhaps with some SPG

Brisket/Pork Butt Fa6 up or down  Many of have heard if you could marry a super model ot cook a Brisket would you do it Fat side up or Down.  The same applies to Pork Butts.  I was recently asked why I cook Fat down.  My reply of because I have always done it that way didn't seem to be right.  It turns out that based on the Pit Barrel cooker and my Previous pellet grills fat down wa the right way.  I had a 50/50 shot and did it right.  The logic in the below 2 articles is that the fat side should face the heat source. Pulled Pork, Baby Back Ribs,Asparagus and Peaches July 18, 2020 For this cook, I made pulled pork, Baby back ribs,asparagus and peaches, I cut the Baby Backs in half. As you can see from above pix I put 2 Hooks in each 1/2 and hung them that way. I had a rack drop in the coals on a previous cook and thought this would be better.   I used the PBC all purpose rub and I cooked them for 2 about hours. Until they were nice and Tender.  I typiclly BBQ with no sauce and feel like you can add your own sauce later.  My wife loved these and ate most them.  She ate some dry and some with store bought BBQ Sauce. The Pork Butt was actually a skin on picnic shoulder.  It cooked for about 5 hrs and came out real good.  The Pork near the bone was juicer then the rest.  This came out really good as well.  I didn't score the skin but I will next time!
