Brisket/Pork Butt Fa6 up or down 

Many of have heard if you could marry a super model ot cook a Brisket would you do it Fat side up or Down.  The same applies to Pork Butts.  I was recently asked why I cook Fat down.  My reply of because I have always done it that way didn't seem to be right.  It turns out that based on the Pit Barrel cooker and my Previous pellet grills fat down wa the right way.  I had a 50/50 shot and did it right.  The logic in the below 2 articles is that the fat side should face the heat source.
