 Pork Butt and Chicken Drumsticks and Thighs 9/5/2022



This Pit barrel Cooker is a pulled pork cooking machine.  Just set it and forget it.  This was an 8 pounder.  It went on the Pit at 7am fat side down seasoned with Arthur Bryant's BBQ Rub.  I didn't 0pen the Pit till 1130am when I added the chicken for our lunch.  The Pork Butt had a temperature just north of 170.

After 35 minutes or so Lunch is ready the chicken was wonderful.  I ate the Drum sticks the wife ate the thighs.



At 2pm I looked at the pork butt. I knew it was ready.  Look at the pull back from the bone.  Look at the gorgeous bark.   I put the thermapen in just to be sure.  It went in butter soft in multiple places another great sign.  It was reading north of 200 everywhere I probed.  It was ready for sure.


When I took it off the grill to wrap it in foil it broke in 3 places (another sign it was ready). I let it rest for 2 hours or so in a cooler wrapped in foil then towels  before being pulled.

Dinner is served 2 Pulled pork sandwiches with Alabama White BBQ Sauce and corn
