The PBC Prime Package is the ultimate bundle offered by Pit Barrel.  It really does offer everything you need to get started except the coals and food (and some maybe you don't)/


The Basic Package

The Basic Package includes , just that the basics.  It includes a cooking grate and Hooks so you can grill both ways.  It also includes some rubs to use on your BBQ.  I think most people will feel the need to purchase additional Items.  The hook tool is flimsy but maybe had I not received the ultimate hook tool as part of the prime package, I wouldn't have noticed.  It includes everything you need to cook except the Charcoal and fire starter (Chimney) to cook.  I have used the all purpose rub and thought it had a nice flavor.


The Select Package

The Select Package includes everything above plus the following.  I would have purchased everything in this package except the Pit Grips (BBQ Gloves), one size fits all is to small for me. (I gave them away).  I have XXL welding gloves which works great. I feel like the Hinged Grate and the cover should be standard equipment.  The hinged grate works to cook on a grate and hanging at the same time.   A hinged grate is also perfect if you ever need to add extra Coals. I can't imagine not covering my cooker between uses.  I have had mixed results with ash pan (mainly user error). A coal basket with an Ash Pan permanently attached would solve the user error issues.


The Choice Package 

The Choice Package includes everything above plus the following.  I would have purchased everything in this package except the Ultimate hook tool and bottle opener (I drink sodastream)  I can't say I would ever need a bottle opener.  It turns out I am happy I got the ultimate hook tool it is well made,  it does have an integrated bottle opener that makes 2 of them so far.  I have used everything in this package except the turkey hanger ( I imagine I will use it some day).  The Skewers and hangers are great! 


The Prime Package

The Prime Package includes everything above plus the following.  I mainly wanted the Prime package for the Grill grates.  I haven't used the 15 inches skewers yet but I probably should have because all the pineapple didn't fit one 10 inch Skewer.  The additional meat hooks have come in handy.  I have used Grill Grates on previous smokers  and they are amazing for burgers.  The Tongs and the Spatula are both items I don't need and won't use they both integrated bottle openers  that makes 4 bottle openers I won't use.  While I never would have purchased the steel shaker set I am really happy I have them  The look good, seem to function well and are customized with the names of each rub, a nice touch.

 Pork Tenderloin, Pears and Pineapple (10/4/2020) I hung the tenderloin For this cook I added a chimney of Royal Oak all natural briquettes to the partially burned charcoal in the basket. I started the cook early because I thought I had 2 Thick Pork tenderloins  It turns out there was 4 of them.   I coated them with olive oil and rubbed them down with Central BBQ Rib Rub I skewered the Pears whole and hung them also I also had some skewered pineapple. The Fruit hung for about 30 minutes, the pork 45 minutes or so. Lunch is served.  That is Alabama White BBQ Sauce on the Pork Tenderloin. Some notes about the cook.  I cooked the Tenderloins to an Internal temperature of between 140 and 150.  I let them rest tented in foil for about a half an hour

Brisket/Pork Butt Fat up or Fat down

Brisket/Pork Butt Fa6 up or down  Many of have heard if you could marry a super model ot cook a Brisket would you do it Fat side up or Down.  The same applies to Pork Butts.  I was recently asked why I cook Fat down.  My reply of because I have always done it that way didn't seem to be right.  It turns out that based on the Pit Barrel cooker and my Previous pellet grills fat down wa the right way.  I had a 50/50 shot and did it right.  The logic in the below 2 articles is that the fat side should face the heat source. Butcher Shops Online

Butcher Shops Online With Covid 19 and shelter in place guidlines, I find it difficult to always get the meat that I need.  I do have instacart and shipt so I do get meat delivery and curbside pickup from many local stores.  Lately I have noticed that Costco has a good meat selection at reasonable prices, but of course you need to be a member and there delivery cost are High. In my area they are $9 plus a 5% service fee and then of course I do tip the driver.  My local butcher offers curbside but sometimes I can't get the cuts I need. Here are some ideas of where you can get meat delivered.
